your weekly update on pickles
i managed to convert someone over to kimchi again, which was nice
(whether kimchi is actually a pickle or not doesn't matter here)
i got to try the danmuji i bought earlier this week, it's a korean radish pickle that's this neon yellow colour and it's sweet & sour! i wanted to make it this week, using turmeric as colouring instead of the traditional gardenia pods (because where?? would i find that???), but the first step is drying the daikon in the sun, and it's been raining?!?! this entire week so gotta wait until the weather clears up.
for ref, it's almost the same thing as takuan, but i saw a lot of recipes which included a nukadoko for the pickling process which is not the process i'll be going through for danmuji. it'll take a month before i even get to eat my danmuji, but that's not that bad??
as for a nukadoko, that's something i wanna make this year, but i have to wait until august before i can really start one because you have to mix it daily and i don't think i'll find someone willing to take care of it while i'm away. also i gotta find rice bran
finally i had quick pickled cucumbers with dinner tonight, using umeboshi in the pickling liquid because i actually had it on hand. there was still liquid left over after eating the cucumber, so i'm pickling pineapple in it now. should be good!
