so i got stuff to make jerk goat and i want to make the meat really nice and soft using sous vide but some of the stuff says it'll take 3 days (self.just_eate)

the goats probably beat you up so you'd say that. kids these days.
I was thinking about doing it in the sous vide and then throwing it into a pan in the oven to get a bit of a crispier crust though. If I were cool I'd have pimento wood to smoke it though.

I love spending too much time on one dish just to ensure it's amazing but I also don't do it very often
yeah, i need to get way better at just doing this stuff. its usually nowhere near this long and slow of a thing to do but even just like an hour or two of prep can yield a better than restaurant meal.
i've also been doing shimp a lot lately because i found out how easy it was to do them in sauces and stuff. (bag of frozen raw shrimp, defrosting them under water and shelling them takes a little time but it's not very long. just throw them in at the end into the sauce and cook them 1-2m each side and bam done. and they work in so many sauces.)
but yeah, cooking is good times.

goat is the best meat IMO. it feels kinda rude to eat a lamb, they barely got a chance, and i haven't really had mutton but I've heard its tougher than goat. and also goats are kinda big assholes a lot of the time. and then goat is just like better tasting than so much other stuff. but lamb is basically just better goat too.

If you don't mind sharing (don't feel pressured to!!!), where do you live that you can get goat meat? I've always wanted to try it.
so I live outside of NYC in an area with a not insignificant jamaican population (not jamaica tho lol) and so it was just hiding in the freezer section. I'm pretty sure it'll be the same 5 trays of goat that basically represent the whole side or whole animal that they bought whenever i go back for more. it was cut up into rough sections so it'll probably just stay that way and I'll bake it with jerk on the outside and serve it in the pieces it came in. but they're gonna be weird which is annoying. also annoying was the super sharp stabby bones that it had.

also, it was really hard for me to parse jerk goat
yeah i always thought goat was goat and mutton was sheep
goat and sheep are totally different animals though!

mutton is supposed to be old sheep though! goat is any age of goat.
also why was jerk goat hard to parse? i know it's not a thing in actual jamaican cooking but i always wanted to pair them together somehow

yeah, that's pretty much why!! i don't see it on menus so it's just surprising
yeah my whole basis of this was "goat is my favorite meat. jerk is my favorite seasoning. why not?"
